Backhousia citriodora, lemon ironwood, lemon scented myrtle or sweet verbena tree. Lemon Myrtle, known in the culinary world as the ‘queen of lemon herbs’ or ‘more lemony than lemon’, has a unique fragrant, sweet yet spicy lemon lime flavour with a whisper of eucalyptus notes in the background. A most versatile spice. It is equally superb with pork, fish, chicken and vegetable dishes as it is with sweet biscuits and desserts. Makes a beautiful calming but uplifting herbal tea as well! Add it to dressings and sauces, ice cream or cheesecake……Mmmmmmm Lemon Myrtle Cheescake……absolutely devine!!! Add towards the end cooking or dry marinate white meats before lightly grilling.
